Chipotle Chicken Tacos

I just got this recipe today and can't wait to try it! Thought I'd share it with you all. I possibly should try it first though? :)

Chipotle Chicken Tacos

1 lb boneless skinless chicken breasts
1 can chipotle chiles in adobo sauce (or chopped green chiles)
1 can. condensed tomato soup
1 c. finely chopped onion
1 Tbl. chili powder
1 Tbl. cumin
Salt & Pepper

Puree canned chiles until smooth. Put in crockpot with soup, onions, spices and stir. Add chicken breasts and turn to coat. Cook on high for 3-4 hours or low 6-8.

Shred chicken and stir to combine when fully cooked.

Now fill soft tortillas with mixture and top with favorite fixings! Sour cream, avocado, cheese, lettuce, etc.


Sounds simple and good I think!

and what kind of chillies are they- mild, med, hot ?

Ha Lisa! This looks like a dump and walk away crock pot meal. My favorite!
Although I live alone and this would make too much for me. I bet it freezes well though.
Not sure on the chiles....that could be up to everyone's taste. Green Chiles are pretty mild, but you could add jalapeno peppers too if you like spicier food. Or save that for the toppings :)
I'll try this and let you know how it goes.
