Food is fuel.....repeat after me!

Boy, when I'm trying to lose weight and get healthy, I can NOT quit obsessing about food! It probably doesn't help that I'm not busy at work this time of year and I basically have this to look at! Yes, it's the mountain of snow outside my office window. It's rather depressing isn't it?

I've been searching for healthy recipes, planning meals and watching the clock in anticipation of my next allowed snack. It's so frustrating! I'd rather just be naturally thin and not give calories a second thought! Oh well.....it is not to be.

I did see a recipe on a show called 'Just Cook This' the other night and I tried it. It's really not too bad! I LOVE pasta!

Sorry....can't remember the title :)

Brown:
5 links Jennie-O Italian Sausage links (meat removed from casings and crumbled)
2 cloves crushed garlic
1 tsp. red pepper flakes

Bring salted water to a boil and stir in 10 oz. of Ronzoni penne pasta and cook 14 minutes.

After sausage is browned, stir in:
1 can fat free evaporated milk
3 Tbl reduced fat Parmesan cheese

Drain pasta and stir into sausage mixture.
This makes approximately 7 cups of the pasta dish for a total of 2000 calories or......

285 calories per cup. Today I had 1.5 cups with grilled yellow squash for lunch, which makes about 450 calories and quite filling :)

Next time I make it, I'll be sure to take a photo so you can see!

I have a large angel sketched out on canvas and am hoping to start on her tonight. She's so big she's intimidating me right now......therefore I cook! LOL

Have a great day!
Darla

EDIT:

Thanks Rhomany! This helps so much! :)

Hi Darla,
Oh dear, I know how hard it can be on a diet. I'm constantly watching what I eat.
My advice, the easiest diet is low carbs. No pasta, potato, rice or bread.
Lots of water, veges and fruit.
There are some great recipes on Tony Ferguson website.
Hugs,
Anna

Yep, I'm trying that Anna. I try to only have whole wheat bread if any, or brown rice. I'm eating lots of stirfry (chicken or shrimp)

I do very, very well..until Fridays. LOL
I'm also trying to workout 4-5 times a week. I swear though, the older I get it really is twice the work with half the results :(

I'll check out tony's site right now, thanks!

Good luck...sending you lots of positive thoughts. I've found that unless I exercise too...it doesn't matter what I eat. And I hate exercising!

I think you should make little paper sticky men, glue them to the window and create your own winter olympics.

Whoa!! We had one big snow and I ate everything in the house. Discipline went out the window. Why is it so hard when your having cabin fever? Check out the Eat Clean website. They are full of inspiration to eat healthy and have some good recipes.
Thanks for sharing yours, sounds yummy!

LOL the edited photo looks so much better!!!

Hang in there buddy - I have just reached the end of my diet after 5 weeks and I feel great and look better too LOL (now I am minus 5kg)

Just keep away from carbohydrates (breads, pastas, rices, potatoes) and you will be right - heaps of meat, veggies and fruit, thats what I did and I did not feel hungry between meals - I did crave CHOCOLATE tho, thats a given :D

I never had a weight problem till I hit the big 50 and it's been downhill from there...
I'm too use to eating whatever I want. Now my waist has left me..
And I love pasta! So I'll try your recipe and see what my waist thinks of that!!

Good luck with being food frugal and keep painting (O:

LOL....loved the photo edit...hehe

Sorry I haven't been by in a while, Darla....things have been quite crazy and busy. I have missed your blog!

As I'm at the pre-menopausal age, I recently bought Christiane Northrup's book - The Wisdom of Menopause - and it explains why we women tend to put on weight and find it hard to lose. It's a wealth of information. Christiane says that we shouldn't eat any more than two hands cupped together at any given meal, eat healthy where possible, and to eat protein with every meal. I've altered a few things in my diet...am giving myself smaller portions and, while I don't believe I can see the difference just yet (it's only been a week), I feel a lot better health-wise.

I detest exercise but I've been trying to do crunches, leg scissors and push-ups each morning.

Good luck, Darla....thanks for the recipe. I remember the Links sausages from when we lived in the States and I used to LOVE them! Very tasty little sausages! I haven't found them here or anything that comes close to the flavours so I guess it's just as well I don't eat meat anymore. lol

Our weight watcher leader said last week.."Don't mourn for food not eaten.." YEAHRIGHT! I'm still mourning over not having Valentine' candy!
Good luck - I have gotten to know more vegetables this last year than anyone in their right mind should ever have to eat..
